Chebakia
A gorgeous sesame honey cookie shaped like a flower. Nira learned to fold these during a visit to a Marrakech souk during Ramadan!

Ingredients
For the Dough

2 cups plain flour

Β½ cup sesame seeds, toasted

1 tsp cinnamon

Β½ tsp anise seeds, ground

ΒΌ tsp baking powder

ΒΌ cup orange blossom water
7
ΒΌ cup vegetable oil
8
Water as needed to bind
To Finish
1
1 cup runny honey
2
2 tbsp sesame seeds, toasted

Orange blossom water a splash
How to Make It

Mix dry. Combine flour, sesame seeds, cinnamon, anise and baking powder in a bowl.

Add wet. Add orange blossom water and oil. Mix until a smooth, pliable dough forms. Add a little water if needed.

Roll thin. Roll dough out on a lightly floured surface to about 3mm thickness.

Cut & shape. Cut into 8Γ5cm rectangles using a pastry wheel. Make 4 slits lengthways, then fold and interweave into a flower shape. Ask a grown-up to help!

Fry golden. With a grown-up's help, fry in medium-hot oil until deep golden brown. Drain on paper towels.

Coat in honey. While still warm, dip cookies into warm honey mixed with a splash of orange blossom water. Sprinkle with sesame seeds and leave to set on a rack.

Chebakia are traditionally made during Ramadan, the Muslim holy month of fasting. After a long day without food, families break their fast with these sweet, honey-drenched cookies and a bowl of harira soup!
