Delicate French almond meringue sandwich cookies with a creamy filling. Nira discovered these in a tiny patisserie on a cobbled Paris street!
Ingredients
For the Shells

100g almond flour, sifted

100g icing sugar, sifted
3
75g egg whites (about 2 large eggs), room temp

75g caster sugar

Food colouring of your choice
For the Filling
1
100g unsalted butter, softened
2
200g icing sugar

1β2 tbsp milk or cream
4
1 tsp vanilla extract
How to Make It

Sift & combine. Sift almond flour and icing sugar together twice. Discard any lumps.

Make meringue. With a grown-up's help, whisk egg whites until foamy. Slowly add caster sugar, whisking until stiff shiny peaks form. Add colouring.

Fold (macaronage). Gently fold the almond mixture into the meringue about 50 times, until batter flows like lava and falls in a thick ribbon.

Pipe & rest. Pipe small 3cm rounds onto baking paper. Tap tray on counter to pop bubbles. Leave to rest 30β45 minutes until a skin forms.

Bake. Bake at 150Β°C (fan) for 13β15 minutes. Cool completely on the tray before removing.

Fill & sandwich. Beat butter, icing sugar, milk and vanilla into buttercream. Pipe onto half the shells, sandwich pairs together. Rest in the fridge 24 hours for best results!

"Macaron" comes from the Italian word maccherone meaning fine dough. They were brought to France by Catherine de Medici in the 1500s β and became one of the most iconic French treats in the world!
